These vegan rainbow wraps are super simple to make and taste amazing. The coconut yogurt based spread is creamy, cool (thanks to the addition of cilantro) and undeniably fresh while the crisp bites of fruit and veggies paired with the soft tortilla offer great texture variation along with subtle nuances of flavor.

Ingredients

  • 1 cup plain unsweetened coconut milk yogurt or plain Greek yogurt (if you are not vegan)
  • 1 tablespoon chopped fresh cilantro
  • 2 teaspoons fresh lemon or lime juice
  • Kosher salt
  • Black pepper
  • ½ cucumber, cut into matchsticks
  • ½ cup matchstick carrots
  • 1 yellow bell pepper, sliced
  • ½ cup shredded red cabbage
  • 4 flour tortillas
The cucumber’s melon-like flavor with the sweet bites of carrot and fruity taste of bell pepper is lovely while the slightly earthy red cabbage rounds everything out. Better yet, no cooking is required making this recipe great for kids. All you need is a kid-safe nylon knife or two to keep prep injury free as well as a designated stirrer to handle the spread. Aside from the many opportunities to get little ones to help, the beautiful array of colors and use of fresh ingredients mean kids can snack, taste, and discover new foods they like during the process all while playing an active role in making a healthy snack/lunch.

Step by Step Directions

Step 1

Combine the yogurt, cilantro, and lemon/lime juice in a bowl and stir. Season to taste with salt and black pepper.

Step 2

Spread two tablespoons of the cilantro spread onto each tortilla in an even layer.

Step 3

Divide the veggies and arrange them onto each tortilla.

Step 4

Tuck each wrap in on both sides then roll.

Step 5

Cut in half to display the lovely array of colors and serve with the remaining spread for dipping.
